Indulge in these delightful buttermilk rusks, a perfect blend of crispy and tender, enriched with a hint of sweetness from sugar and the warmth of raisins or nuts. Ideal for a cozy afternoon snack or a charming brunch treat.
IngredientsWhat you need
- 500 g all-purpose flour
- 100 g sugar
- 10 g baking powder
- 5 g salt
- 1 cup buttermilk
- 2 large eggs
- 100 g margarine or butter
- 50 g raisins or nuts
Method
- 1
Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
- 2
In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
- 3
In another bowl, whisk together the buttermilk, eggs, and melted margarine or butter until well combined.
- 4
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. If using, fold in raisins or nuts.
- 5
Transfer the dough to the prepared baking tray and flatten it into a rectangle about 2.5 cm (1 inch) thick.
- 6
Bake for 40-45 minutes or until golden brown. Remove from the oven and let it cool slightly before cutting into strips.
- 7
Place the strips back on the baking tray, standing them upright, and bake again for an additional 30-40 minutes until they are dry and crisp.
- 8
Remove from the oven and allow to cool completely before serving or storing.
