Indulge in these classic Canadian butter tarts, where a flaky pastry shell cradles a rich, gooey filling of brown sugar and butter, with a delightful hint of vanilla. Perfect for dessert or a sweet treat with coffee!

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup corn syrup
  • 1/4 cup raisins or pecans

Method

  1. 1

Preheat your oven to 400°F (200°C).

  2. 2

In a mixing bowl, combine flour and cold butter. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

  3. 3

Add a few tablespoons of cold water to the flour mixture, mixing until a dough forms. Roll the dough out on a floured surface and cut into circles to fit into a muffin tin.

  4. 4

In another bowl, whisk together the granulated sugar, brown sugar, corn syrup, beaten egg, and vanilla extract until well combined.

  5. 5

Place a few raisins or pecans in the bottom of each pastry shell, then pour the filling mixture evenly into the tarts, filling them about three-quarters full.

  6. 6

Bake in the preheated oven for 20-25 minutes, or until the filling is set and the tops are golden brown.

  7. 7

Remove from the oven and let cool for a few minutes before removing from the muffin tin. Serve warm or at room temperature.
