Indulge in these classic Canadian butter tarts, where a flaky pastry shell cradles a rich, gooey filling of brown sugar and butter, with a delightful hint of vanilla. Perfect for dessert or a sweet treat with coffee!

- 1 cup all-purpose flour
- 1/2 cup unsalted butter
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup corn syrup
- 1/4 cup raisins or pecans

Preheat your oven to 400°F (200°C).

In a mixing bowl, combine flour and cold butter. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add a few tablespoons of cold water to the flour mixture, mixing until a dough forms. Roll the dough out on a floured surface and cut into circles to fit into a muffin tin.

In another bowl, whisk together the granulated sugar, brown sugar, corn syrup, beaten egg, and vanilla extract until well combined.

Place a few raisins or pecans in the bottom of each pastry shell, then pour the filling mixture evenly into the tarts, filling them about three-quarters full.
