Experience the vibrant flavors of South Africa with Bunny Chow, a hearty dish of tender lamb or chicken simmered in aromatic curry, served in a hollowed-out loaf. Perfect for a cozy weeknight dinner or a gathering with friends.

Ingredients

  • 4 pieces white bread loaves
  • 500 grams lamb or chicken
  • 1 tablespoon vegetable oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 tablespoon curry powder
  • 400 grams chopped tomatoes
  • 1 cup vegetable stock

Method

  1. 1

Heat the vegetable oil in a large pot over medium heat.

  2. 2

Add the chopped onion and minced garlic, sauté until golden brown.

  3. 3

Stir in the curry powder, cooking for an additional minute until fragrant.

  4. 4

Add the cubed lamb or chicken, browning on all sides.

  5. 5

Pour in the chopped tomatoes and vegetable stock, bring to a simmer.

  6. 6

Cover and cook for 30-35 minutes until the meat is tender and the sauce has thickened.

  7. 7

While the curry is cooking, cut the tops off the bread loaves and hollow them out to create bowls.

  8. 8

Once the curry is ready, spoon it generously into the hollowed bread bowls and serve immediately.
