Indulge in the sweet, fragrant delight of Basbousa, a traditional Middle Eastern semolina cake soaked in syrup and infused with rose water. Perfect for festive gatherings or a cozy afternoon treat with tea.

Ingredients

  • 1 cup semolina
  • 1 cup yogurt
  • 1 cup sugar
  • 1/2 cup butter
  • 1 teaspoon baking powder
  • 1/4 cup blanched almonds
  • 1 cup water
  • 1 cup sugar
  • 1 teaspoon rose water

Method

  1. 1

Preheat your oven to 180°C (350°F).

  2. 2

In a large bowl, mix together the semolina, yogurt, sugar, melted butter, and baking powder until well combined.

  3. 3

Pour the mixture into a greased 9x9 inch baking dish, smoothing the top with a spatula.

  4. 4

Using a knife, cut diamond shapes into the surface of the batter and place a blanched almond in the center of each piece.

  5. 5

Bake in the preheated oven for 20 minutes, or until golden brown.

  6. 6

While the basbousa is baking, prepare the syrup by boiling water and sugar together in a saucepan for about 10 minutes. Add rose water if desired.

  7. 7

Once the basbousa is done baking, pour the hot syrup evenly over the cake while it is still warm.

  8. 8

Let it cool for a few minutes before slicing and serving.

I loved how the yogurt made the basbousa incredibly moist and fluffy.
