Indulge in the sweet layers of flaky phyllo dough, rich walnuts, and fragrant spices, all drenched in a honey-lemon syrup. This classic Middle Eastern dessert is perfect for celebrations or a cozy evening treat.

- 1 package phyllo dough
- 1 cup unsalted butter
- 2 cups finely chopped walnuts
- 1 cup granulated sugar
- 1 cup water
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 teaspoon lemon juice

Preheat the oven to 350°F (175°C).

In a bowl, mix the chopped walnuts or pistachios with ground cinnamon.

Unroll the phyllo dough and cover it with a damp cloth to prevent drying out. Brush the bottom of a 9x13 inch baking dish with melted butter.

Layer 8 sheets of phyllo dough in the dish, brushing each sheet with melted butter. Add a layer of the nut mixture (about 1/4 of the mixture). Repeat this process until all nuts are used, finishing with 8 layers of phyllo dough on top.

Cut the baklava into diamond or square shapes using a sharp knife.

Bake in the preheated oven for about 45 minutes, or until golden brown.

While the baklava is baking, prepare the syrup by combining sugar, water, vanilla extract, and lemon juice in a saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes.

Once the baklava is done baking, immediately pour the hot syrup over it. Allow it to cool completely before serving.
