- 1/2 cup unsalted butter
- 453.6 g cream cheese
- 1 cup sugar
- 3 large eggs
- 1/2 cup Bailey's Irish Cream
- 1 teaspoon vanilla extract
- 1 cup sour cream

Preheat your oven to 325°F (160°C).

In a mixing bowl, combine the crushed digestive biscuits and melted butter. Mix until well combined, then press the mixture into the bottom of a 9-inch springform pan to form the crust.

In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy.

Add the eggs one at a time, mixing well after each addition. Then, add the Bailey's Irish Cream and vanilla extract, mixing until fully incorporated.

Pour the cheesecake mixture over the crust in the springform pan. Smooth the top with a spatula.
