Savor the comforting flavors of this hearty Irish dish, where tender bacon meets sweet cabbage and creamy potatoes. Perfect for a cozy weeknight dinner that warms the soul.

Ingredients

  • 1 kg unsmoked back bacon
  • 1 medium head of green cabbage
  • 2 large potatoes
  • 1 cup chicken stock
  • 1 teaspoon black pepper
  • 1 tablespoon butter
  • to taste salt

Method

    In a large pot, place the back bacon and cover it with cold water. Bring to a boil over medium heat.

    Once boiling, reduce the heat and let the bacon simmer for about 20 minutes.

    Add the chopped potatoes to the pot and continue to simmer for another 10 minutes.

    After 10 minutes, add the quartered cabbage to the pot and cook for an additional 15 minutes until the cabbage is tender.

    Remove the bacon, potatoes, and cabbage from the pot and let the bacon rest for a few minutes before slicing.

    Serve the sliced bacon on a plate alongside the cabbage and potatoes. Drizzle with butter and season with salt and black pepper to taste.
