- 1 kg pork trotters
- 500 g beef shank
- 2 liters water
- 1 medium onion
- 2 cloves garlic
- 1 carrot carrot
- 3 g bay leaves
- to taste salt
- to taste black pepper
Method

In a large pot, combine the pork trotters, beef shank, and water. Bring to a boil over medium heat.

Once boiling, reduce heat to low and skim off any foam that rises to the surface. Add the onion, garlic, carrot, bay leaves, salt, and black pepper.

Cover the pot and let it simmer for about 3-4 hours, or until the meat is tender and the broth is rich.

Remove the meat from the pot and set it aside to cool. Strain the broth through a fine sieve to remove solids.

Once the meat is cool enough to handle, chop it into small pieces and combine it with the strained broth.

Pour the mixture into a mold or individual bowls and refrigerate for at least 4 hours, or until it sets.

To serve, run warm water over the outside of the mold to loosen the aspic, then invert onto a plate.
