Dive into the heart of traditional French cuisine with this savory aspic, featuring tender pork trotters and beef shank simmered to perfection. Ideal for a unique appetizer at your next gathering or a cozy family dinner.

Ingredients

  • 1 kg pork trotters
  • 500 g beef shank
  • 2 liters water
  • 1 medium onion
  • 2 cloves garlic
  • 1 carrot carrot
  • 3 g bay leaves
  • to taste salt
  • to taste black pepper

Method

  1. 1

In a large pot, combine the pork trotters, beef shank, and water. Bring to a boil over medium heat.

  2. 2

Once boiling, reduce heat to low and skim off any foam that rises to the surface. Add the onion, garlic, carrot, bay leaves, salt, and black pepper.

  3. 3

Cover the pot and let it simmer for about 3-4 hours, or until the meat is tender and the broth is rich.

  4. 4

Remove the meat from the pot and set it aside to cool. Strain the broth through a fine sieve to remove solids.

  5. 5

Once the meat is cool enough to handle, chop it into small pieces and combine it with the strained broth.

  6. 6

Pour the mixture into a mold or individual bowls and refrigerate for at least 4 hours, or until it sets.

  7. 7

To serve, run warm water over the outside of the mold to loosen the aspic, then invert onto a plate.
