Savor the comforting warmth of Ärtsoppa, a traditional Swedish yellow split pea soup, infused with thyme and bay leaf. Perfect for a cozy weeknight dinner or a hearty winter meal with friends.

Ingredients

  • 500 g yellow split peas
  • 1 large onion
  • 1 carrot carrot
  • 1 liter vegetable broth
  • 1 teaspoon dried thyme
  • -17 °C bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Method

  1. 1

Rinse the soaked yellow split peas under cold water and set aside.

  2. 2

In a large pot, sauté the chopped onion and diced carrot in a little oil over medium heat until softened.

  3. 3

Add the rinsed split peas, vegetable broth, dried thyme, and bay leaf to the pot.

  4. 4

Bring the mixture to a boil, then reduce the heat and let it simmer for about 60-90 minutes, or until the peas are tender.

  5. 5

Stir occasionally and add more broth or water if needed to maintain the desired consistency.

  6. 6

Once cooked, season with salt and black pepper to taste, and remove the bay leaf.

  7. 7

Serve hot, optionally with a dollop of mustard on top and accompanied by thinly sliced pork or ham.
