Ingredients

  • 2 cups Basmati rice
  • 4 cups water
  • 1 cup sugar
  • 1/2 cup ghee
  • 1/2 cup milk
  • 1 teaspoon cardamom powder
  • 1/2 cup mixed nuts
  • 1 teaspoon saffron strands

Method

    In a large pot, bring water to a boil and add the soaked basmati rice. Cook until the rice is 70% done, then drain and set aside.

    In the same pot, heat ghee over medium heat, then add the cooked rice and stir gently.

    Add sugar, milk, cardamom powder, and saffron milk to the rice. Mix well and let it cook on low heat for about 10-15 minutes until the rice is fully cooked and flavors are absorbed.

    In a separate pan, lightly toast the mixed nuts until golden brown, then add them to the rice mixture.

    Once cooked, gently fluff the Zarda with a fork and let it rest for a few minutes before serving.

    Garnish with additional nuts if desired and serve warm as a sweet rice dish.
