Indulge in the comforting flavors of Ukrainian varenyky, tender dumplings filled with creamy potato and cheese, sautéed with onions. Perfect for a cozy weeknight dinner or a special gathering with loved ones.

- 2 cups all-purpose flour
- 1 large egg
- 1/2 cup water
- 1 teaspoon salt
- 2 cups potatoes
- 1/2 cup cheese
- 1 tablespoon butter
- 1 onion medium, chopped
Method

In a large bowl, mix the flour and salt. Create a well in the center, add the beaten egg and warm water gradually to form a dough.

Knead the dough on a floured surface for about 5-10 minutes until smooth. Cover with a cloth and let it rest for 20 minutes.

In a skillet, melt the butter over medium heat and sauté the chopped onion until golden brown. Mix into the mashed potatoes along with the cheese.

Roll out the dough to about 1/8 inch thick and cut into circles (about 3 inches in diameter).

Place a spoonful of the potato mixture in the center of each circle. Fold over and press the edges to seal tightly.

Bring a large pot of salted water to a boil. Drop the varenky in batches into the boiling water and cook until they float to the surface, about 5-7 minutes.

Remove with a slotted spoon and serve warm, optionally topped with sour cream or fried onions.
