Indulge in the heartwarming flavors of Speckknödel, a traditional Austrian dumpling made with smoky bacon and fresh parsley. Perfect for a cozy weeknight dinner or a festive gathering with friends and family.
IngredientsWhat you need
- 250 grams stale bread rolls
- 100 grams smoked bacon
- 1 cup milk
- 2 large eggs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons fresh parsley
- 1 tablespoon butter
Method
- 1
In a large bowl, combine the stale bread rolls with the milk and let them soak for about 10 minutes.
- 2
In a pan, sauté the diced bacon until crispy, then let it cool slightly before adding it to the soaked bread mixture.
- 3
Add the eggs, chopped parsley, salt, and black pepper to the mixture and mix well until combined.
- 4
Shape the mixture into round dumplings, about the size of a golf ball.
- 5
In a large pot of boiling salted water, gently drop the dumplings in and cook for about 15 minutes or until they rise to the surface.
- 6
Remove the dumplings with a slotted spoon and let them drain on a plate.
- 7
In a frying pan, melt the butter and fry the dumplings until golden brown on all sides.
- 8
Serve hot, garnished with additional chopped parsley if desired.
