Experience the refreshing taste of Socată, a traditional Romanian elderflower drink that combines floral notes with zesty lemon. Perfect for summer gatherings or a delightful afternoon refreshment.

Ingredients

  • 10 cups water
  • 6 pieces elderflower heads
  • 2 cups sugar
  • 1 piece lemon
  • 1 teaspoon citric acid

Method

    In a large container, combine the water and sugar. Stir until the sugar is completely dissolved.

    Add the elderflower heads to the sugar-water mixture. Make sure to gently shake off any insects before adding.

    Add the sliced lemon to the mixture. If using, also add the citric acid at this point.

    Cover the container with a clean cloth and let it sit at room temperature for 3-5 days. Stir once a day.

    After the fermentation period, strain the liquid through a fine mesh sieve or cheesecloth into clean bottles.

    Seal the bottles and refrigerate. The Socată is now ready to be enjoyed cold.
