Savor the rich, homemade flavor of these artisanal pork sausages, seasoned with thyme and sage. Perfect for a cozy weekend brunch or a hearty weeknight dinner, they bring warmth to any table.
IngredientsWhat you need
- 500 grams pork shoulder, minced
- 1 teaspoon salt
- 1 teaspoon black pepper, ground
- 1 teaspoon thyme, dried
- 1 teaspoon sage, dried
- 2 tablespoons water
- 1 meter sausage casings
- 2 tablespoons oil
Method
- 1
In a large bowl, combine the minced pork shoulder, salt, black pepper, thyme, sage, and water. Mix well until all ingredients are evenly incorporated.
- 2
Prepare the sausage casings by rinsing and soaking them in cold water for at least 30 minutes if they are natural casings.
- 3
Using a sausage stuffer or piping bag, fill the casings with the sausage mixture, being careful not to overstuff. Tie off the ends securely.
- 4
Heat oil in a frying pan over medium heat. Once hot, add the sausages to the pan, cooking them for about 15-20 minutes, turning occasionally until they are browned and cooked through.
- 5
Remove sausages from the pan and let them rest for a few minutes before slicing or serving whole.
- 6
Serve hot with mashed potatoes and gravy or with baked beans for a traditional Irish meal.
