Savor the rich flavors of Pečená Kachna, a traditional Czech roasted duck dish, perfectly seasoned and served with tender carrots and potatoes. Ideal for a cozy family dinner or a festive gathering.

- 1 whole duck
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 cups cabbage
- 2 tablespoons vegetable oil
- 1 cup water
- 4 pieces carrots
- 4 pieces potatoes

Preheat your oven to 200°C (400°F).

Clean the duck thoroughly and pat it dry. Season the inside and outside with salt and pepper.

Place the duck in a roasting pan. Add the water to the pan to keep the duck moist while roasting.

Roast the duck in the preheated oven for about 90 minutes, basting occasionally with the pan juices.

While the duck is roasting, heat the vegetable oil in a large skillet over medium heat. Add the cabbage and cook until softened, about 10 minutes.

Add the sliced carrots and quartered potatoes to the skillet with the cabbage and sauté for another 15 minutes.

After 90 minutes, increase the oven temperature to 220°C (430°F) and roast for an additional 30 minutes to achieve a crispy skin.

Once done, remove the duck from the oven, let it rest for 10 minutes, then carve and serve with the sautéed vegetables.
