- 2 medium carrots
- 1 cup peas
- 4 large eggs
- 1 cup pickles
- 1 cup cooked chicken
- 1/2 cup mayonnaise

In a pot, boil the diced potatoes in salted water until tender, about 10-15 minutes, then drain and let cool.

In another pot, boil the diced carrots until tender, about 5-7 minutes, and then drain and let cool.

If using frozen peas, blanch them in boiling water for 2-3 minutes, then drain and cool them down.

In a large mixing bowl, combine the cooled potatoes, carrots, peas, chopped eggs, pickles, and diced chicken.
