Savor the rich flavors of Mumbar, a traditional Middle Eastern dish of spiced lamb and rice stuffed into tender sheep intestines. Perfect for a cozy family gathering or a festive occasion, this dish brings warmth to your table.
IngredientsWhat you need
- 2 meters sheep intestines
- 1 cup rice
- 200 grams ground lamb
- 1 medium onion
- 2 tablespoons olive oil
- 1 teaspoon seven spices
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Method
- 1
In a pan, heat the olive oil over medium heat and sauté the chopped onion until translucent.
- 2
Add the ground lamb to the onion and cook until browned, about 5-7 minutes.
- 3
Stir in the washed rice and the seven spices, salt, and black pepper. Mix well.
- 4
Carefully stuff the mixture into the cleaned sheep intestines, leaving room for the rice to expand.
- 5
Tie off the ends of the stuffed intestines with kitchen twine to secure the filling.
- 6
Bring a large pot of salted water to a boil and gently add the stuffed mumbar. Boil for about 30 minutes.
- 7
Remove the mumbar and let it cool slightly before slicing into pieces.
- 8
Serve warm with yogurt or a spicy sauce on the side.
