- 1 kg lamb shoulder, cut into chunks
- 200 g dried apricots
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cumin
- 500 ml chicken or beef stock
- salt to taste salt
- pepper to taste black pepper
Method

Heat the olive oil in a large pot over medium-high heat.

Add the lamb chunks and brown them on all sides for about 8-10 minutes.

Stir in the chopped onion and minced garlic, cooking until the onion is translucent, about 5 minutes.

Add the cinnamon and cumin, stirring for another minute until fragrant.

Pour in the stock and bring to a simmer. Season with salt and pepper.

Cover and reduce the heat to low, letting it cook for about 1.5 hours until the lamb is tender.

Add the soaked apricots to the pot and continue to cook for another 20 minutes.
