Indulge in the rich, nutty layers of Kyiv Cake, a delightful Ukrainian treat made with walnuts, fluffy meringue, and creamy butter. Perfect for special occasions or a sweet afternoon pick-me-up with tea.

- 200 g walnuts
- 200 g sugar
- 4 large egg whites
- 200 g butter
- 250 g condensed milk
- 50 g powdered sugar
- 1 teaspoon vanilla extract
- 1 pinch salt

Preheat your oven to 150°C (300°F) and line two baking sheets with parchment paper.

In a large bowl, beat the egg whites with a pinch of salt until soft peaks form.

Gradually add the sugar while continuing to beat until the mixture becomes glossy and stiff peaks form.

Fold in the chopped walnuts gently until well combined, then spread the meringue mixture evenly onto the prepared baking sheets to form two discs.

Bake in the preheated oven for about 60 minutes or until the meringue is crisp and easily lifts off the parchment paper. Allow to cool completely.

In another bowl, cream the softened butter with the condensed milk and vanilla extract until light and fluffy.

Once the meringue discs are cooled, layer one disc on a serving plate and spread half of the buttercream mixture on top. Place the second meringue disc on top and spread the remaining buttercream over it.

Dust the top with powdered sugar and refrigerate for at least 2 hours before serving to allow the flavors to meld.
