Experience the refreshing taste of homemade Kvas, a traditional Eastern European beverage made from rye bread, sugar, and raisins. Perfect for summer picnics or as a unique addition to your next gathering.

- -17 °C rye bread
- 1 cup sugar
- 10 cups water
- 2 tablespoons active dry yeast
- 1 cup raisins
- 1 tablespoon honey
Method

Cut the rye bread into small cubes and toast them in the oven until they are dark brown, but not burnt.

In a large bowl, combine the toasted bread, sugar, and honey (if using).

Boil the water, then let it cool slightly before pouring it over the bread mixture. Stir to combine.

Once the mixture cools to room temperature, sprinkle the active dry yeast over the top and let it sit for about 15 minutes.

Stir in the raisins (if using) and cover the bowl with a cloth or plastic wrap. Let it ferment for about 5-7 days, stirring daily.

After the fermentation period, strain the mixture through a fine sieve or cheesecloth into clean bottles, discarding the solids.

Seal the bottles with caps and refrigerate. Kvas is best served chilled and can be enjoyed within a couple of weeks.
