Indulge in these fluffy Krapfen, a delightful Austrian treat filled with sweet apricot jam and dusted with powdered sugar. Perfect for a cozy brunch or festive gatherings, they bring warmth and joy to any occasion.

- 500 g all-purpose flour
- 250 ml milk
- 80 g sugar
- 50 g butter
- 1 packet active dry yeast
- 2 large eggs
- 1 cup apricot jam
- 1 liter vegetable oil
Method

In a small bowl, combine warm milk and yeast with 1 tablespoon of sugar. Let it sit for 10 minutes until frothy.

In a large bowl, mix flour, the remaining sugar, melted butter, and eggs. Add the frothy yeast mixture and knead until a smooth dough forms.

Cover the dough with a cloth and let it rise in a warm place for about 1 hour or until doubled in size.

Once risen, roll out the dough on a floured surface to about 1 cm thick. Cut out circles using a cookie cutter.

Place a small spoonful of apricot jam in the center of half the circles. Top with the remaining circles and seal the edges tightly.

Heat vegetable oil in a deep saucepan to 180°C (350°F). Fry the Krapfen in batches until golden brown, about 3-4 minutes on each side.

Remove the Krapfen from the oil and let them drain on paper towels. Dust with powdered sugar before serving.
