Indulge in the comforting flavors of Kaspressknödel, a traditional Austrian dish featuring hearty stale bread and rich cheese, perfect for a cozy weeknight dinner or a delightful weekend brunch with friends.
IngredientsWhat you need
- 250 g stale bread
- 200 g cheese
- 1 cup milk
- 2 pcs eggs
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp chopped fresh parsley
- 50 g butter
Method
- 1
In a large mixing bowl, combine the stale bread cubes and warm milk. Let them soak for about 10 minutes until softened.
- 2
Add the grated cheese, beaten eggs, salt, pepper, and parsley to the bread mixture. Mix until well combined.
- 3
Form the mixture into small, round dumplings, about the size of a golf ball. Flatten them slightly to create a patty shape.
- 4
In a large skillet, melt the butter over medium heat. Once hot, add the dumplings in batches, making sure not to overcrowd the pan.
- 5
Fry the dumplings for about 5-7 minutes on each side or until golden brown and crispy.
- 6
Remove the Kaspressknödel from the skillet and place them on paper towels to drain any excess butter.
- 7
Serve warm, often accompanied by a salad or as a side to a meat dish.
