Indulge in a classic German Käsekuchen, a creamy cheesecake made with quark, sweetened with sugar, and enriched with a hint of lemon zest. Perfect for a cozy dessert after a hearty meal or a delightful treat at your next gathering.

- 200 g digestive biscuits
- 100 g unsalted butter
- 500 g quark
- 200 g sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 tsp lemon zest
- 1 tbsp cornstarch

Preheat your oven to 180°C (350°F). Grease a springform pan with butter.

In a bowl, combine the crushed digestive biscuits and melted butter. Mix until well combined and press this mixture into the bottom of the prepared springform pan to create a crust.

In another bowl, beat the quark (or cream cheese) and sugar together until smooth. Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract, lemon zest, and cornstarch until well combined.

Pour the cheese mixture over the biscuit crust in the springform pan and smooth the top with a spatula.

Bake in the preheated oven for about 60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cake cool in the oven with the door ajar for about 1 hour.

Remove the cake from the oven and refrigerate for at least 4 hours, preferably overnight, before serving.

Once chilled, release the cheesecake from the springform pan, slice, and serve. Optionally, top with fresh fruits or a drizzle of fruit sauce.
