- 2 cups Basmati rice
- 1 kg chicken
- 3 tablespoons vegetable oil
- 1 large onion
- 3 cloves garlic
- 2 teaspoons Kabsa spice mix
- 4 cups water
- 1 cup tomato sauce

Heat the vegetable oil in a large pot over medium heat.

Add the chopped onion and sauté until golden brown.

Add the minced garlic and chicken pieces; cook until the chicken is browned on all sides.

Stir in the Kabsa spice mix and cook for another minute until fragrant.

Pour in the water and tomato sauce (if using); bring to a boil, then reduce heat and simmer for 30 minutes until the chicken is cooked through.

Remove the chicken and set aside. Add the soaked Basmati rice to the broth, adjust salt, and stir gently.

Place the chicken on top of the rice, cover the pot, and cook on low heat for about 20 minutes or until the rice is tender and the liquid is absorbed.
