Warm up with a bowl of Hot and Sour Soup, a delightful blend of tender chicken, silky tofu, and earthy mushrooms, all infused with zesty vinegar and a kick of white pepper. Ideal for a cozy weeknight dinner or a comforting lunch.

Ingredients

  • 4 cups chicken broth
  • 1 cup shredded cooked chicken
  • 1 cup firm tofu
  • 1/2 cup wood ear mushrooms
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1 teaspoon white pepper
  • 2 scallions sliced

Method

  1. 1

In a large pot, bring the chicken broth to a boil over medium heat.

  2. 2

Add the shredded chicken, cubed tofu, and wood ear mushrooms to the pot. Stir to combine.

  3. 3

Add soy sauce and white pepper to the pot, and simmer for about 5 minutes.

  4. 4

Stir in the rice vinegar and then gradually add the cornstarch mixture while stirring continuously to thicken the soup.

  5. 5

Continue to cook for an additional 2-3 minutes until the soup is slightly thickened.

  6. 6

Taste and adjust seasoning if necessary, adding more vinegar or soy sauce as desired.

  7. 7

Serve the soup hot, garnished with sliced scallions.
