- 2 tablespoons coconut oil
- 1 large onion
- 3 cloves garlic
- 1 inch ginger
- 2 teaspoons curry powder
- 1 can coconut milk
- 1 cup tomato puree
- 1 teaspoon salt
- 1 cup fresh coriander
