Savor the classic British comfort of fish and chips, featuring crispy battered cod served alongside golden, fluffy fries. Ideal for a cozy weeknight dinner or a fun gathering with friends.

- 4 pieces cod fillets
- 1 cup all-purpose flour
- 1 cup cold sparkling water
- 1 teaspoon baking powder
- 4 medium potatoes
- Salt to taste sea salt
- Oil for frying vegetable oil

Peel the potatoes and cut them into thick chips. Rinse them under cold water and pat them dry.

In a large pot, heat enough oil to deep fry the chips at 180°C (350°F). Fry the chips for about 5 minutes until they are soft but not colored. Remove and drain on paper towels.

In a mixing bowl, whisk together the flour, baking powder, and a pinch of salt. Gradually add the cold sparkling water and mix until you have a smooth batter.

Dust the cod fillets lightly with flour, dip them into the batter, and ensure they are well coated.

Increase the oil temperature to 190°C (375°F) and carefully add the battered fish to the hot oil. Fry for about 6-8 minutes or until golden and crispy. Remove and drain on paper towels.

Return the partially cooked chips to the hot oil and fry them again for another 3-4 minutes until they are golden brown and crispy. Drain and season with sea salt.

Serve the fish and chips immediately with malt vinegar or tartar sauce on the side.
