Savor the vibrant flavors of Middle Eastern cuisine with homemade falafel, featuring crispy chickpea patties infused with garlic and fresh parsley. Ideal for a weeknight dinner or a festive gathering, serve them in pita with tangy tahini sauce.

Ingredients

  • 1 cup dried chickpeas
  • 1 small onion
  • 2 cloves garlic
  • 1 bunch fresh parsley
  • 1 tsp ground cumin
  • 1 tsp baking powder
  • 1 tsp salt
  • Oil as needed for frying

Method

  1. 1

Drain and rinse the soaked chickpeas and place them in a food processor.

  2. 2

Add the chopped onion, minced garlic, parsley, cumin, baking powder, and salt to the food processor.

  3. 3

Pulse the mixture until it is coarsely blended but not pureed. Scrape down the sides as needed.

  4. 4

Transfer the falafel mixture to a bowl and refrigerate for about 30 minutes to help it firm up.

  5. 5

Heat oil in a deep fryer or heavy pan over medium heat. Form the chickpea mixture into small balls or patties.

  6. 6

Carefully place the falafel into the hot oil and fry until golden brown, about 3-4 minutes per side.

  7. 7

Remove from oil and drain on paper towels. Serve hot with pita bread and tahini sauce.
