- 1 cup dried chickpeas
- 1 small onion
- 2 cloves garlic
- 1 bunch fresh parsley
- 1 tsp ground cumin
- 1 tsp baking powder
- 1 tsp salt
- Oil as needed for frying

Drain and rinse the soaked chickpeas and place them in a food processor.

Add the chopped onion, minced garlic, parsley, cumin, baking powder, and salt to the food processor.

Pulse the mixture until it is coarsely blended but not pureed. Scrape down the sides as needed.

Transfer the falafel mixture to a bowl and refrigerate for about 30 minutes to help it firm up.
