Indulge in these Easy Peasy Cupcakes, where fluffy vanilla goodness meets a hint of sweetness. Ideal for a cozy afternoon treat or a child's birthday party, these delightful bites are sure to bring smiles all around.

Ingredients

  • 2 large eggs
  • 1 tsp vanilla essence
  • 125 g caster sugar
  • 125 g soft margarine
  • 125 g self-raising flour

Method

    Heat the oven to 180°C/350°F/Gas mark 4. Put all the ingredients in a bowl and beat them together until the mixture is smooth and lighter in colour.

    Line a bun tin with paper cake cases and half fill each case with the cake mixture.

  3. 3

    Cook the cakes for 18-20 minutes. You can tell they are done when they have risen up, are golden in colour, and spring back into shape when pressed.
