- 1 kg chicken, cut into pieces
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 400 g canned tomatoes, crushed
- 100 g dried apricots, chopped
- 1 cup chicken broth
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons fresh cilantro, chopped

In a large tajine or heavy pot, heat the olive oil over medium heat.

Add the chopped onion and sauté until translucent, about 5 minutes.

Incorporate the minced garlic, cumin, cinnamon, and ginger, and cook for another 2 minutes until fragrant.

Add the chicken pieces to the pot, turning to coat them well with the spices. Cook until browned on all sides, about 10 minutes.

Pour in the crushed tomatoes, chicken broth, salt, and black pepper. Add the chopped dried apricots, and stir to combine.

Cover the tajine and reduce the heat to low. Let it simmer for about 70 minutes, until the chicken is tender and the flavors meld.
