Indulge in the creamy, subtly sweet delight of Carrageen Moss Pudding, a traditional Irish dessert that combines the ocean's bounty with rich milk and a hint of lemon. Perfect for a cozy evening or as a unique treat for guests.
IngredientsWhat you need
- 2 tablespoons dried carrageen moss
- 2 cups water
- 1 cup milk
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- a pinch salt
- 1 tablespoon fresh lemon juice
Method
- 1
Soak the dried carrageen moss in cold water for about 30 minutes until it softens.
- 2
Rinse the soaked carrageen moss thoroughly under cold running water to remove any sand or debris.
- 3
In a saucepan, combine the rinsed carrageen moss and 2 cups of water. Bring to a boil over medium heat.
- 4
Reduce the heat and let it simmer for about 15-20 minutes, stirring occasionally, until the moss has dissolved and the mixture thickens.
- 5
Strain the mixture through a fine sieve into a bowl to remove any solid pieces of moss.
- 6
Add in the milk, sugar, vanilla extract, and a pinch of salt to the strained liquid. Stir well until the sugar has dissolved.
- 7
Pour the mixture into serving dishes or molds and refrigerate for at least 2 hours to set.
- 8
Once set, serve chilled and add a splash of fresh lemon juice if desired for added flavor.
