Indulge in the sweet, gooey goodness of Canadian Butter Tarts, where a rich filling of brown sugar and butter meets a flaky crust. Perfect for a cozy dessert or a delightful treat at your next gathering.
Pastry
What you need
- 1.5 cups cake or all purpose flour
- 0.25 tsp salt
- 0.5 cup cold butter
- 3 to 4 tbsp ice water
Method

Mix flour and salt. Rub in butter until mixture resembles coarse crumbs. Add ice water gradually until dough just comes together. Form into a disc, wrap, and chill for 30 minutes.
Filling
What you need
- 0.5 cup unsalted butter
- 1 cup brown sugar
- 2 large eggs
- 1 tbsp white vinegar
- 1 tsp vanilla extract
- 0.25 tsp salt
- 0.5 cup raisins
Method

Whisk melted butter and brown sugar until smooth. Beat in eggs, vinegar, vanilla, and salt. Stir in raisins if using.
Assembly

Roll out dough on a floured surface. Cut 10 to 12 cm circles and press into a greased muffin tin.

Fill each tart shell about two thirds full. Bake at 200°C for 12 to 15 minutes until filling is bubbling and pastry is golden.

Let tarts cool slightly before removing. The centers should be soft and sticky.
Notes
For firmer centers, bake 2 minutes longer. Some Canadians swear by adding chopped walnuts instead of raisins. Best enjoyed slightly warm with a cup of tea or coffee.
