Experience the heartwarming flavors of Eastern Europe with this vibrant borscht, featuring earthy beets, crisp cabbage, and a dollop of creamy sour cream. Ideal for cozy weeknight dinners or festive gatherings.

Ingredients

  • 1 medium beet
  • 2 cups cabbage
  • 1 medium carrot
  • 1 medium onion
  • 3 cloves garlic
  • 4 cups beef broth
  • 2 tablespoons vegetable oil
  • 1 tablespoon vinegar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup sour cream
  • 2 tablespoons fresh dill

Method

  1. 1

In a large pot, heat the vegetable oil over medium heat. Add the diced onions and garlic, and sauté until the onions are translucent.

  2. 2

Add the grated beet, carrot, and shredded cabbage to the pot, stirring to mix. Cook for about 5 minutes until the vegetables begin to soften.

  3. 3

Pour in the beef broth and add the salt and black pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30 minutes.

  4. 4

After 30 minutes, add the vinegar (if using) and adjust seasonings if necessary. Allow the borscht to simmer for an additional 15 minutes.

  5. 5

Remove the pot from heat and let it sit for a few minutes. This allows the flavors to meld together.

  6. 6

Serve hot, garnished with fresh dill and a dollop of sour cream.
