- 2 cups cabbage
- 1 medium carrot
- 1 medium onion
- 3 cloves garlic
- 4 cups beef broth
- 2 tablespoons vegetable oil
- 1 tablespoon vinegar
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup sour cream
- 2 tablespoons fresh dill

In a large pot, heat the vegetable oil over medium heat. Add the diced onions and garlic, and sauté until the onions are translucent.

Add the grated beet, carrot, and shredded cabbage to the pot, stirring to mix. Cook for about 5 minutes until the vegetables begin to soften.

Pour in the beef broth and add the salt and black pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30 minutes.

After 30 minutes, add the vinegar (if using) and adjust seasonings if necessary. Allow the borscht to simmer for an additional 15 minutes.
