Indulge in the sweet, chewy goodness of Anzac Biscuits, a classic Australian treat made with rolled oats, coconut, and golden syrup. Perfect for afternoon tea or a cozy snack, these biscuits bring warmth to any gathering.

Ingredients

  • 1 cup rolled oats
  • 1 cup plain flour
  • 1 cup brown sugar
  • 1/2 cup desiccated coconut
  • 125 grams unsalted butter
  • 2 tablespoons golden syrup
  • 1 teaspoon baking soda
  • 1 tablespoon water

Method

  1. 1

Preheat your oven to 160°C (320°F) and line a baking tray with parchment paper.

  2. 2

In a large bowl, combine the rolled oats, plain flour, brown sugar, and desiccated coconut.

  3. 3

In a small saucepan, melt the unsalted butter along with the golden syrup over low heat.

  4. 4

In a separate bowl, mix the baking soda with the tablespoon of water, then add it to the melted butter and syrup mixture.

  5. 5

Pour the wet mixture into the dry ingredients and stir until well combined.

  6. 6

Spoon tablespoon-sized amounts of the mixture onto the prepared baking tray, leaving space between each biscuit.

  7. 7

Bake in the preheated oven for about 15-20 minutes, or until golden brown.

  8. 8

Allow the biscuits to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
