- 1 kg beef roast (rib or sirloin)
- 1 kg potatoes
- 500 g carrots
- 500 g parsnips
- 4 tbsp olive oil
- 1 cup beef stock
- 2 sprigs fresh rosemary
- to taste salt and pepper
Method

Preheat the oven to 200°C (390°F).

Rub the beef roast with olive oil, salt, and pepper. Place the rosemary on top.

In a roasting pan, add the potatoes, carrots, and parsnips. Drizzle with olive oil and season with salt and pepper. Toss to coat.

Place the beef roast in the center of the roasting pan with the vegetables around it.

Roast in the preheated oven for about 1.5 hours for medium-rare, or until the beef reaches your desired doneness.

Remove the roast from the oven and cover with foil. Let it rest for 15-20 minutes before slicing.

While the meat rests, pour the beef stock into the roasting pan with the vegetables and stir. Return to the oven for another 15 minutes.

Slice the roast and serve with the roasted vegetables and gravy made from the pan juices.
