Indulge in homemade ravioli filled with creamy ricotta and Parmesan, enveloped in tender pasta and topped with rich tomato sauce. A perfect dish for a cozy weeknight dinner or a special gathering with loved ones.

Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 cup ricotta cheese
  • 1 cup grated Parmesan cheese
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp olive oil
  • 1 cup tomato sauce

Method

    In a large bowl, combine the flour and salt. Make a well in the center and add the eggs. Mix until a dough starts to form.

    Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic and let it rest for 30 minutes.

    In another bowl, mix the ricotta, Parmesan, salt, pepper, and olive oil until well combined. This will be your filling.

    Roll out the rested dough into thin sheets using a pasta machine or rolling pin. Cut into squares about 3 inches wide.

    Place a teaspoon of filling in the center of each square. Fold over and press the edges to seal, ensuring no air is trapped inside.

    Bring a large pot of salted water to a boil. Cook the ravioli for 3-4 minutes until they float to the surface. Remove with a slotted spoon.
