- 3 large eggs

In a large bowl, combine the flour and salt. Make a well in the center and add the eggs. Mix until a dough starts to form.

Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic and let it rest for 30 minutes.

In another bowl, mix the ricotta, Parmesan, salt, pepper, and olive oil until well combined. This will be your filling.
