Experience the vibrant flavors of Southeast Asia with popiah, a delightful fresh spring roll filled with crunchy jicama, carrots, and bean sprouts, drizzled with savory peanut sauce. Perfect for a light lunch or a fun appetizer at gatherings.

Ingredients

  • 8 pieces popiah skin
  • 2 cups jicama
  • 1 cup carrot
  • 1 cup bean sprouts
  • 1 cup hard-boiled eggs
  • 1/2 cup peanut sauce
  • 1/4 cup sweet soy sauce
  • 1/4 cup fresh coriander

Method

    Prepare all the vegetables by shredding the jicama and carrot, and rinsing the bean sprouts.

    In a large bowl, combine the shredded jicama, carrot, and bean sprouts. Mix well.

    Take one piece of popiah skin and spread a tablespoon of peanut sauce evenly over it.

    Add a small amount of the vegetable mixture in the center of the skin, followed by a tablespoon of chopped hard-boiled eggs.

    Fold the sides of the popiah skin over the filling and then roll it up tightly from the bottom.
