- 8 pieces popiah skin
- 2 cups jicama
- 1 cup carrot
- 1 cup bean sprouts
- 1 cup hard-boiled eggs
- 1/2 cup peanut sauce
- 1/4 cup sweet soy sauce
- 1/4 cup fresh coriander
Method

Prepare all the vegetables by shredding the jicama and carrot, and rinsing the bean sprouts.

In a large bowl, combine the shredded jicama, carrot, and bean sprouts. Mix well.

Take one piece of popiah skin and spread a tablespoon of peanut sauce evenly over it.

Add a small amount of the vegetable mixture in the center of the skin, followed by a tablespoon of chopped hard-boiled eggs.

Fold the sides of the popiah skin over the filling and then roll it up tightly from the bottom.
