Ingredients

  • 1 packet Tennis biscuits, crushed
  • 100 g margarine, melted
  • 250 g smooth cottage cheese
  • 500 ml granadilla yogurt
  • 2 x 113g cans granadilla pulp
  • 1 tin (410g) crushed pineapple, drained
  • 10 ml grated lemon rind
  • 20 ml gelatine
  • 30 ml water
  • 250 ml cream, whipped

Method

  1. 1

    Mix biscuits and margarine together and press into a spring-form tin to form a base. Place in refrigerator to set.

    Beat cheese and mix in yogurt, pulp, pineapple, and lemon rind. Add a little sugar to taste if necessary.

    Soak gelatine in water and dissolve over heat. Add to cheese mixture.

  4. 4

    Fold cream into mixture and spoon into base. Chill until set.

    Decorate with cream if desired.
