- 225 g unsalted butter, room temp
- 225 g caster sugar
- 1 egg, beaten
- 0.5 tsp vanilla extract
- a pinch salt
- 450 g plain flour, sifted
Method

Cream together butter and sugar until fluffy.

Add beaten egg, vanilla, and salt. Mix well.

Gradually add flour and mix until incorporated.

Wrap dough in clingfilm and refrigerate for 2 hours.

Roll dough out on a lightly floured work surface to a thickness of 3-4mm.

Cut out shapes, place on baking trays and refrigerate for a further 15 mins before baking.

Preheat oven to 180°C.

Bake for 12 mins or until golden.

Leave to cool on trays for 5 mins then transfer to cooling rack.
